VEGETABLE MARROW SOUP. [Newspaper Article] — Flemington Spectator — 26 February 1914

UTEGETABiLE 'MAllt W SOUP, Thlli is one of the nicest of purees, its French namo being "Potage puree d'anubcr gine." It can be made eitter:. plain or rich by using milk or oroean respectively, and is wonderfully smooth and soft in texture. Taike off the rind from a large marrow, or froml two small ones, nut it into a blind. stewpan with an onion, a little butter, salt and poppper and Ienough stock to cover. Let it cook gently till soft, then rub !?t~-through a hair slove and mix it withl one pint and it half of milk, or if t-large marrow it may require two pints. Make a mixture of 3oz of but teor and 3o of flour, and when smooth pour oni the soup ailnd stir all together till bolling. 8ervoe ith fried breal, If cream beo, used the mixture will not be wanted, but the creaml (about half a pint for the quantities` hero given) should be made hot and put into the soup just be fore servinmg.
