MARKET FOR HOME-CURED MEATS Because of the recent expose of the filthy methods of the great meat packing houses upon which towns-people have been entirely dependent for their meat supplies , our farm housewives will find a ready market for all meat products that they can prepare for winter use—sausages , headcheese , pickled pigs feet , hams , bacon , dried beef—anything that can be prepared at home . If it has heretofore been the custom of the present generation of farmers to market all their -uiiimals and buy back meats prepared for * use they should consult the fathers and grandfathers , mothers and grandmothers , as to the methods of preserving and preparing meats for home use in the good old days before we were born . In the farm home of the writers childhood , barrels of corned beef and pork home prepared and smoked hams and bacon , homemade sausage , headcheese and dried beef furnished the winter supply of meat , with a turkey , or pair of fat chickens or ducks occasionally ....
