Davis, who la the owner ofthe Alden fruit-drying process for this county, arrived on the Orizaba yesterday morning, and will, we pre sume, lose no time In commencing operations. This process, which has only been In operation in this State about one year, is admitted by the most competent judges to ftUrpMM any other means for dryiiur fruit yet discovered. Its products are far supe rior in color, flavor, cleanliness and keeping qualities to the v.m-dried fruits, and although attempts have been made to establish rival kilns, none have come into general favor, whereas, the Alden drying-houses are rauidly increasing, and each new one is regarded as a great benefit to the district in which it is built. As we shall soon have a fruit-drying establishment conducted on the Alden process in this city, a brief description of the mode by which the f>uit is dried may be found of interest to the people of this valley. Tbe Alden pro cess is based on purely scientitlc prin ciples. Its treatment of the fruit is simply pneumatic evaporation of tbe water it contains. The Starch and sugar of the fruit is retained and the article rendered decay - proof. The Alden preserved fruits are essentially fresh, and they remain so for years. We have seen specimens of Alden dried corn, peas, nectarines, pump kins, squashes and apples, which after being placed in water a short time, as sumed just the shape and resumed just the flavor possessed before being submitted to the drying process. In drying the water alone is removed from the fruit, hence a little water restores the dried fruit to its ori...

Newspaper*and ministers are study ing the hoodlum problem, and offering suggestions a« to tho best method far preventing boys from developing into coarse, brutal rowdies. The boo Hums already made we cannot unmake. They are ours and we must bear with them until the grave or San Qucntin's walls hide them from onr sight:. They have grown up in idleness and the vice that always comes with idleness, and we cannot save them now. They are past redemption, and stand forth living evidences of the falsity of the statement that "while the lamp holds out to burn, the vilest sinner may re turn." A Baa Francisco hood lum of five years standing can no more become a good boy and a respectable citizen than a sprat can swallow a whale. We may, however, profit by the lesson these boys are teaching us. The California boy is no worse, naturally, than the boy of any other State. Circumstances make our boy bad.
