1 r c I A CHICKEN A LA BALTIMORE AI Singe draw and wash two young chickens each weighing three pounds i divide each into seven parts the brenst cut lengthwise in three pieces leaving a small wingbone attached to each side of the breast the second joint and leg left as one piece and the back cut in half crosswise Free the end of the drumsticks from meat and cut the bone even remove all the bone from the second joints giving them the shape of a chop Free also the small wingbone from meat Next season the chicken with salt and pepper i dip them first in flour then in beaten egg and last in grated bread crumbs lay them on a board and pat each piece lightly to smooth the crumbs i lay the chicken in a buttered pan pour over a teaspoonful melted butter over each piece cover with buttered paper and bake one hour in a medium hot oven Put the chicken feet for a second into boiling water remove instantly and rub off the skin with a coarse towel Place the feet giblets the neck and the back of on...
