SIR,-The following extract from a letter received this mail from London, haying reference to an important colon ial industry, -will no doubt be deemed worthy of insertion in your columns. It is from an old and well-known resi dent of Emerald Hill, Mr. James Ward, late secretary of the Mechanics' Institute. Yours obediently. C. J. DURHAM. Emerald Hill, July 12th. "The Australian meat shops are not doing well, neither do they deserve success. They send over large cases of meat . in tallow, these cases are too often unequal to the weight and rough usage ; they receive- instead of the meat being hermetically sealed it is more or less exposed to the atmosphere from the time the case is broken. To save loss, a variety of dishes are made up, pies, polonies, and a kind of brawn, this latter is sold at 9d. per pound-I bought, a pound, on loo...

THURSDAY, JULY 22, 18G9. THE MUNICIPAL ELECTIONS. IT certainly should be a subject of gratulation to our ratepayers to find that there; is a considerable measure of ambition to serve them in a honorary position, and besides giving them an opportunity of a selection, it evinces a feeling that the position is deemed sufficiently honorable to be contended for, instead of obtaining it by a vain inglorious ' "walk over.' We are taken by surprise at the number now in can didature, and tru»t that in each case the best men may win. As far as the Hill is concerned there will be no lack of good men the Mayor and not, as we misapprehended, the ex-Mayor is one of the retiring Councillors, but will stand again, and by his attention to the duties of Chief magistrate during the past year, has probably secured popularity enough to return him, if notjat the head in a good position on the poll Jlr.
