We bavt published, gays The Ilne itead, from time to time, tome good re cipes for pickling pork and curing hanM. but the following, ay a correspondent ia the Country Gentleman may serve a good purpose at thU time, lor many of our readers who did not have an oppor tunity ot readinjr them: - For each iuO pounds of pork, weigh out 8 pound of salt. After the meat i cold, rub each oiece well with part of the salt. Kepeat the opreation the next day. The third day take the remainder of the salt, which should be about five pound, add to it 2 pounds of brown su gar. 4 ounces of saltpetre. 1 pint of mo lasses, and about three gallons of water. Boil a d skim, and when cold, pour over the meat, which should in the meantime have been closely packed in a suitable vessel and weighed down just enough to insure its all being covered with the briuc. liiht pounds of salt, 2 pouuda of sugar. 4 ounces of saltpetre, and one pint of molasses, are enough to cure 100 po...
