Maw a Champion Cheese was Mads. 1. Temperature of milk at night 78 d°s 2. Whon skimfned in morning 0§ deg. 3. Heat morning's milk to 100 «Jeg, and allow to drop to 84 deg. . 4. Add teaspoon ful ojE rennet to eight gallons of milk, &amp; Cut in forty-five minutes. Breaking up curd to the size of a pin occupied 30 minutes, 7, Settle for &amp; minutes. 8, (a) Heat to 110 deg -warmer to make 88 deg in tub ; (£) second-scald, Jieat to 1 30 deg, making 94 deg in tub ; stir for 10 minutes, settle for 15 minutes and draw oft the whey. 9, Cut in squares and allow to remain 20 minutes. 10, Take from tub and place oxx rack, H, Cover with warn clothe®, remain -20 minutes, 12. Cut in two-inch squares, tie in cloths and place on the rack. 13. Open every 30 minutes to let out whey and gas when the curd is greasy, 14. Sour to taste and smell, 15.
