Ingredients - Small piece carrot, turnip and onion, loz. bacon,, lot. flour, 4 peppercorns, 1 tomato, 1 bouquet garni, loz. butter, 4 gills stock. ,Method.-Cut the vegetables into dice, and make the butter hot, fry till brown, add the dry flour, stir well, add herbs, tomato, peppercorns, and stock, boil gently twenty min utes; remove the scum as it rises, squeeze through a tamis cloth. Parsley, Caper, Onion Sauces. Ingrcdients-- pint white sauce. With one tablespoon chopped ptrs ley for first; with one tablespoon chopped capers fur second; with three boiled onions (chopped) lot third.
