FRIED EGGS WITH BROWN SAUCE - Brown two tablespoonsfuls of flour in a little butter, stir an little water into it, a very little chopped onion and a pinch of sugar and one of -salt; put it into a sauce pan and boil for a hour, stirring occasionally to prevent from getting lumpy. Fry a couple of eggs in butter or lard, place them in a dish, pour the sauce over them and serve with fried bread. LEMON MARMALADE.-Slice the lemons very thin, only taking out the seeds; add three pints of cold water to each pound of fruit; after being cut in pieces, let it stand twenty-four hours; boil it until tender; pour it into a earthen bowl until the follow ing day; weigh it, and' to every pound of bniled fruit add on?q ad ,ne.h-hf pounds of lump sugar; boil the whole together u'ntil' the syrup jellies and the chips are rather transparent. Archer's Limber Legs. " The most peculiar thing I ever noticed about Jockey Fred Archer," said an old English sport recently, "was the deliberation with which he settled himself in his saddle. It rarely took him less than five minutes- to get his position, but when he did get settled there wasn't a horse on the Continent that could shift him. Archer had peculiar legs. They were abnormally long from the knee to the ankle, and wonderfully elastic. These legs stood Archer in good stead in a hard race. With his knees pressed dead against the paniers of his saddle he could remove his feet from the stirrups and, curling that por tion of his legs below the knee high upon the flanks of his nag, rake the flesh with his steels. Archer was the only jockey in the world who could perform this feat. It was seldom that he chose to do it, but when he did you could rest assured that the race was for blood.
