Improve the Butter Product. [Newspaper Article] — The Shoalhaven News and South Coast Districts Advertiser — 24 October 1891

Improve the Butter Product. Speaking at the dinner in connection with the recent Kincardinesbire (Scotland) Show, Major Disney Inues, of Cowie, who presided, urged, the importance of farmers making every effort and embracing every opportunity to raise the quality of their butter product. Many of them had, he said, attained great skill in the handling and application of artificial manures, and if they would only bring the same energy to bear on the dairy department of their work they would very soon produce a .better quality of products, and bring better returns to themselves at the same time. There was no question that in that county, as in most parts of the northern counties, they had not given that atten tion to the dairy which its importance rendered desirable. -Butter made in the old style was very good as a rule while it w-w fresh,' buf it Would not compare w5th the new style lot keeping. That, h« thought, was the reason, why in a sin^lo town in that county over 1001b. of butte...

Sunday Work in Dairy Factories [Newspaper Article] — The Shoalhaven News and South Coast Districts Advertiser — 24 October 1891

Sunday Work ia Dairy Factories (Feom the Melbourne Leader) The Sunday labor question in con nection with the working of creameries and butter factories is creating a con siderable amount of discussion in the Western district of the colony, where these dairying establishments are now very numerous. The clergy are using their influence in the matter, and the Presbytery of Mortlako has JUsued a circular containing the opinions of several leading authorities on the sub ject, including Messrs. David Wilson, Alex. Crawford and J. Findlow, who all agree that Sunday work is sinful and unnecessary in the working of creameries; The dairymen, however, are apparently divided over the ques tion, and several of the factories refuse to accept the advice of the experts of the cliurch. As a test case a meeting of {shareholders was'field at the Cotiden ractory last wceic to consider a request from the shareholders of the Dixie creamery that milk should be received and separated on Sundays at that es ...

Why should those whoso milk registers 8 or 9 degrees receive as much for a gallon as those whose milk registers 17 and 18 degrees! Why is there not a standard regulated by the directors whereby fraud Would be prevented by suppliers ?
