[AGRICULTURAL ] 1 SCIENCE A NEW DAIRY INVENTION . What promises to be an Important nvention for use in the dairy industry , is a new and rapid method for determining the moisture content of butter . An old ruling by the internal revenue department , as well as a late regulation under the national pure food law , places a limit on the amount of moisture which butter can legally conlain and imposes a tax of 10 cents per pound upon all butter in wlil-h the APPARATUS FOR TESTING THE WATER CONTENT OF BUTTER . moisture content exceeds the standard established . The moisture content is dependent upon tlie feed , time of year and process of manufacture and under certain conditions closely approaches the limit even under the most careful manufacture . THE CHICAGO POULTRY SHOW . The famous poultry show last month was well attended by visitors from all over the Middle West . It was tlie eleventh annual exhibition of the Fanciers and Breeders Association , and great interest was manifested in the various fancy breeds of poultry . More than four thousand fowls were on view , and while the great majority of the exhibitors were residents of Chicago and Illinois , other sections were also well represented . Many of tie exhibits were superb . One of the chickens that received a great deal of notice was Julian , the world s champion hen . a Rose Comb White Leghorn , owned by P . J .
