DON'T add wine too lato to soups. It's the wino's flavor you want not its alcoholic content. It takes at least 15 minutes of simmering for the alcohol to burn off completely. DO use a dry red or white wino to flavor meat fish and poultry dishes; experiment with inexpen- sive table wines to find ono that adds just right flavors.
