Now it is a largo and prosperous business along the New England coast. The fish used are not real sardines, but young herrings and other sea fish. Thoy are put up in cotton-seed oil of a fine grade; and the industry is so successful that thousands of cases are now exported to Europe. Singular as it may seem to somo, these imitation sardines are not only cheaper than the genuine French article, but they are pronounced by gourmands in both Europe and America belter in flavor and richness than the genuine French article. The labels jut upon them are often imitations of the French owing to the prejudices of people at first for tho foreign fish. But this prou dice is now disappearing, and American brands are acquiring jl standing and reputation in the markets which will probably, in a few years, place ...
