SATURDAY, OCTOBER 4, 1862. FARMERS' DEPARTMENT. Canning. Fruit. A 'correspondent of the Rural New Yorker gives bis method of canning fruit, which seems to ua the best that we have no ticed of the many that have been pub-! Usbed: . : The best- cans are wide-mouthed glass bottles, and use no corks. Lay them in a pan of clean water (warm, "if you please), set 'them - over a kettle of hot water, while your fruit is heating in a nicely cleaned brass or porcelain kettle. Allow three ounces of sugar to a pound of peaches, and four ounces to a pound of cherries or cur rants. - If you have a very sweet tooth, you may like more; taste and ascertain. Now remember . the old couplet, "A pint's a pound, the world round," and you will find that two pounds of fruit, with the sugar, will fill a quart can. As soon as the fruit begins to boil, empty the now hot wa ter from one of your bottles, set on a plate (so as to save what is spilled), fill it full, wipe the edge of the bottle, and have ready a c...

The Liverpool Mercury secessionist or gan publishes a letter from a resident of New York, addressed to bis brother in Liv erpool, and dated at Montreal on the 15th of August, in which the writer gives an account of his flight to Canada to avoid the draft. His adventures seem to have been of a lively character. He says be "got bome as soon as possible," after reading the telegram announcing the order for a draft. General Scbofield's army baa returned to Springfield, after its brief campaign in Arkansas, and will probably go into winter quarters at tbat place. It is also stated tbat Blunt's command is coming back to Fort Scott. 31'Cf.ELLAN RE3IOVE1). The long expested removal of Gen. Mc Clellan baa at last transpired. Few will be disappointed, and a mucb larger number highly gratified, at tbis intelligence. He has lost two hundred thousand of our best soldiers, and spent six hundred millions of treasure and no one can point to a single act of his, during his command, that will in the least compensate the country for this immense loss of life and expenditure of money. Burnside takes his place, with Hooker as second in command. ITEMS BY UST NIOIIT'S MAIL. A special dispatch from Trenton, Tenn., dated tbe 12tb, says: The grand arm...
