In the making of Cheddar cheese, perhaps the first essential is. pure, sweet milk of good quality; and to 3 be pure and sweet, not only must.the dairy and its surroundings be scrupu lously clean, . and no part of it used, as is so often the case, as a larder or store for vegetables, paraffin, etc., but lthe cowhouses must be well' cleaned and ventilated. Above all, the- ud ders and teats of the cows, and the hands of the milkers, must be thor oghly washed before milking, and the greatest care taken to. prevent any impurities getting into the milk. IMPROVING THE HERD. POTENTIALITIES OF TESTING. The profits from cow-keeping de pend upon three main Iacturs-viz., cost of production, the yield of milk or butter fat, and the pr.ce at which the milk or butter-fat i- sold. The first of these three factors works against the other two, and over all three the cow-owner has a larger or smaller degree of control. The cost of keeping a cow, when all the out lays and incomes are considered, var ies under different circumstances, but it is generally recognized that it costs at least £7/10/ to feed and milk the average cow, or, in other words, a cow is required to produce 150Ib. of butter fat before she returns any pro fit to her owner. On a butter fat basis, therefore, a cow which pro duces 1511b. of butter fat earns 1/ profit. A cow which produces 1521b. is not considered much better than the first cow, but it is apparent that she is 100 per cent. bettoer on a profit earning basis. A LESSON IN THRIFT. With all his industry, the elder Du mas never succeeded in amassing wealth. The large sums brought in by his countless novels never remained long in his hands, and he died in pov erty. One day in 1870 he appeared at Puys, where his son was then residing, and greeted him with "My boy, I have come to lay my bones in your house.'' A room was quickly made ready for hint; he undressed and lay down, never to rise again. He hung his waistcoat over the back of a chair by his bed side, and as soon, as he was alone with his son he said to him "Alexandre, my son, look and see how much money there is in my waist coat." THE HUMANE MAN. Old Po6ter came home one evening with a dejected -looking fox-terrier pup, which he had brought from an honest ruffian in the streets. He gave it to his gardener with the request that he would cut the little animal's tail to the correct length as ordained by society, which sometimes conceives' curious notions of beauty. "But do it kindly, Grimes. I don't want the- poor. beast to suffer." Next morning, and for three morn ings after that, old Pooter was dis turbed by dismal howls from the pup. At last, unable to stand it any longer, he sent for Grimes. "Are you ill-treating that- puppy Grimes? Itfseems to be very unhappy." "Ill-treat a dorg, sir. I. couldn't do it, sir." 'Then, what's it howl like that for. every morning?" "It's that tail business, sir. You told me to cut it as kindly as I could, so I've been cuttinig off a little bit every morning. But it don't seem to help the pup, much, sir. It isn't a bit grateful, sir."
