APPLE RECIPES. . Apple Snow. — Peel, core and cut five large apples into quarters. Boil them in half a pint of water with the rind of half a lemon until tender. Re move peel and beat the fruit to a pulp, then set to cool. Beat the whites of five eggs to a stiff froth, add sugar, mif all with the apples, and whisk until the mixture is quite stiff. Heap on a glass dish, garnish with glace cherries or bright-colored jelly, and serve with whipped cream. Apple Compote.— Boil half a pound of sugar and one pint of water to a syrup. Pare 3ud core, keeping whole, six or eight green apples, drop them into the boiling syrup, and simmer carefully till the fruit is soft, but not broken. Lift the apples out into a i glass dish. Put a spoonful of whip- 1 ped cream on top or eacn apple, ana decorate across with long strips of crab apple or red currant jelly. Railway Accident. The Bairnsdale line has been rather an unlucky one lately. ' An extra ordinary accident occured at the Bairnsdale Railway station' at abont half past five on Saturday morning The 5.40. train for Melbourne had been made up, and whilst it was waitiug at the platform the guard's van was run into by an engine which had moved (without a crew) from the engine shed, about 200 yards away. At the time of impact the runaway engine was going at a rate of 10 miles an hour. The guard's van was crumpled up, and its girders were telescoped into those of the first-class corridor car attached. The only other carriage, a second class one, was not damaged. Only four first class passengers had booked on the train, ard those already on board were warned in time to get off The train for Melbourne only suffered a few miuutes' delay. VALENCIA CREEK. Mr. Cros'oie, rabbit inspector visi ted here last week and gave a. demonstration of the method of mix ing poison for the destruction or rabbits. Mr M Donald, who has for many years taken a prominent part throughout Gippsland in, the matter^ introduced Mr. Crosbie. at the same time impressing on all present the grave danger of the rabbit plague. Williams, of Briagolong. the inventor of an apple-cutting machine, also spoke on the rabbit question and! mentioned cases where it was costing settlers up to £10 per week to cope with the rabbits, Mr. A.
