DlSCOSfflOS ABOUT Queensland IN ENGLAND.-Among the topics of co lonial interest by the Psnama mail, we find a lengthy correspondence in " The Times" relative to tbe advantages offered by Queensland as a settlement for emigrants. Tbe subject was started by a Tetter in the " Scotsman," an Edinburgh p»peri g>v'ag an excessively dismal view of affiairs in Queensland. This was copied into the " Times" of 25th May. On the 28th May a letter appeared in tbe "Times" signed " Squatter," controverting the views of the " Scotsman's" correspondent, and asserting-" Tbe writer of the letter is evidently one of, unfortunately, a very numerous class in the colonies known as 4 crawler*.' As an employer of labor in Queensland myself, I only wish there were some truth in the state ments alluded to. A TALK ON CHEESE MAKING. Dr. Voelcker confesses that he does not understand the nature of rennet, and he has proved that the chemists before him have been wrong in their conclusions. In looking over the re mit of bis analysis of milk, although knowing perfectly well the percentage of its digerent constituents, I was struck with the large amount of phosphates which it contains. He showed me the different solid constituents in a qnart of milk. In one bottle was the oils, in another the catien, in another was the phosphates, the milk, sugar. Sua. The amount of phosphates in a qnart of milk is no infinitessimal quantity: but oor farmers will better understand its balk when I say that it is " quite a handful," and then consider for a moment the large numbers of the huidfuHs that are taken from the soil by our dairy farmers, and never re turned.
