The Farmer's Department. UNRirE Potatoes for Seed. Henry Ward Beecher contributes the following to the Country Gentleman for August : In reply to an inquiry whether unripe potatoes are as good or better for planting than perfectly matured ones, may not some light be thrown upon the subject by the parallel cose of seeds? It is well known that many kinds of seeds, if they are to be planted immediately, will come up quick er and make equally as good plants, if they are gathered before ail the processes of maturation are perfected. In one sense a seed ia ripe as soon as its embryo is per fectly formed. It is competent to perform all the functions of a seed except one, and that one is preserve itselF against tho attack of wet and cold during the winter. For this Iastv purpose, after the seed is plantiug ripj, nature goes on storing up carbon in tho form of starch, or other ele ments, but not for the sake of adding any thing to the germinant power of the seed. The foundation of pood farming is the keeping of 88 much rtock a can be kept well, and no more; but some farmers make the mi-take of overstocking their farms, by which means their stock feed on poor pasturage, and in a drought frequcutly suffer for the want of food. In the winter seuou too many cattle are crowded into small barnyard?, and the result is that the strongest ones cat the most of the fodder, and the small er and weaker animals are hooked about and have to take up with the leaving of the others ; and when all are provided with stalls, some portion of tho stock suffers when let into the yard, in consequence of there being too many for the space allotted them, especially in stormy weather, when tbey all strive to get uuder the sheds.
