FARM BUTTER Hints to Makers. In a bulletin issued by the United States Department of Agriculture, it is pointed out that the essential steps to be taken in making eood farm butter includes the following:-Pro duct .clean milk and cream. Cool the ' create immediately after it comes from the separator. Clean and sterilize all Utensils. Ripen or sour the cream at from 65 degrees to 75 degrees Fahr., until mildly sour. Always use a ther mometer in order to know that the right temperature is reached. Cool the cream to churning temperature, or below, and hold at that temperature for at least two hours before churning. Use a churning temperature--usually between 52 degrees and 66 decrees .Fahr.-that will require 30 or 40 mins. t o obtain butter. Clean and scald the churn, then half fill it with cold water and revolve until churn is thoroughly cooled, after which empty the water. Pour the cream into the churn through 8 strainer. Add butter colour, from 20 to 35 drops ta a gallon of cream, ex...

TO TELL THE AGE OF A HORSE It is a remarkable fact that com paratively few horse owners c&n tell the age of "a horse by the mouth. The following may interest many. Inspect the lower jaw, where there are six teeth in front when a horse has a full mouth. Before the foal is two weeks old, two middle nippers appear, two more at eight weeks old, and the two corner ones make their appearance at the age of eight months. At twelve months the outside grooves disappear from the two middle ones. The grooves. disappear from the second pair at two years old, and from the corner pair at three years old. ,AU these are what are usually termed foal's teeth, and they disappear thus the middle pair at two years old, the next pair at three years old, and the corner pair at four years pld; so that when the horse is rising four, there will be four'permanent teeth and one pair of foal's teeth-viz., the outside _ off corner pair. UNWELCOME VISITOR. Many of the stores and other' es tablishments in town make a regu lar practice of copying off the names from all the theatrical programmes in town, and sending cordial letters to the various . players. These let ters call each of the players' atten tion to the fact that he will receive the best of treatment and every courtesy if he will merely present the letters at the store. The enterprising plan haS never failed to bear fruit, and many* a sale has been directly due to the v sense of flattery that some actor or actress felt over receiving a per sonal letter from one of the big stores. One of these letters was addressed to a performer on the hill at a local burlesque house last week. This performer had only his first name on the programme-Pete the ? name was.
