Dried Fruit ' Within tho last two years this business has increased until it has become, iu many sec tions, a leading branch of trade, and bus been found to bo very profitable Tho high tax imposed upon tho distillation of fruit has hud A tendency to increase the business. Again, tho work is oasy?tho greater part of it being done "by women and children. Sinco this is comparatively a new business in many sections, and one that should ho increased, we propo.se giving a few practical suggestions as to the best plan of drying, pack ing, shipping, oto. Wo begin with . Peeled Peaches.?To make these tho most saleable, tho fruit should, bo taken from the trees before it becomes perfectly ripe and mellow?just ob soon as they begin to "blush,"?unless this is done thoy will-dry dark in color, which is tho | great objection, and leaves them always with out a quotable price. They should bo sliced ..as fine as a little care and attention will allow....
