MUSHROOM SAUCE. Pick out the stems and skin the mush rooms and the stems. Cut them in small pieces, and wash them, Then put them in a saucepan, with rather more water than will cover them, Let them stew gently for about half an hour, or till they are soft. They will now have yielded a fine rich sauce. Stir in a little flour and butter kneaded together, and season with pepper and salt. This preparation may be eaten with potatoes, the same as meat ; it also forms an excellent sauce to many dishes.

As a rule, steamed puddings are put in an earthenware dish, covered with a tight cover or greased paper, which is placed in a pan of boiling water, which must not come more than three parts up tne siaes of the pudding dish, If the water boils away, more boiling water must be added, and it must be kept always boiling. Be careful in removing the lid that no drops fall on the pudding, Puddings, etc., when steamed, do not require so much liquid in them as when baked. The dry air of the oven dries them j steaming keeps them moist. ?
