The sap of tlic Sugar or Rock Maple when it first flows in the spring, is to appearance nearly ns clearand liquid-as pure water, and id reality it contains •carcelv anything hut cane sugar. The •agaris more easily obtained io a mar­ ketable state than from the juices of any Other plant yielding sugar for com­ merce. If the sap be pure and clear as. . j it flows from the tree, it is- only oeces- •ary to boil it down ip clean vessels, ° taking care not to burn it, and when •officiently concentrated, to preserve it • aa molasses,' or after boiling more to poor it into moulds.
