f Page 8- Section C - C&S Media Publications - May 11-12, 2005 San Martino named Best New Winery for 2004 continued from page 1C grown from rootstock from Emilio's grandfather's vineyard in Spain. Texas wines The specialty of Texas wines, Emilio said, seems to be Cabernet Sauvignons. "We can make Cabernet Sauvignons in Texas that rival any- thing anywhere else in the world," he said. When there is a extremely hot summer in Texas, however, a vine- yard can lose most of the grapes, with or without an irrigation system. With irrigation, the grapes get full of water, and the heat causes the grapes to burst. Without an irrigation system, an extremely hot summer will cause the plant to die and the grapes to shrivel. Even if the grapes are harvested early, the sugar levels won't have had time to build up, causing the grapes to become too acidic. "If it's 100 degrees a few times in July and August, everything is fine. As long as it doesn't rain, and then hit 105 degrees. The skins just ...

There is not one single line in that scene which is suitable for quoting, but maybe you remember the gist of it.
