The feature of the market was the excellent condition of most of the stock, a draft of welhers, 8 and 4 yvs old, bred and fattened by Mr-Uobt. Ellis, of Boho Sooth, was much admired, and were without doubt the best erer penned in Violet Town; pens of fat lambs fattened by Mr R. D. Crocker, "Honeysuckle," were also very prime, as also a pen of wethers, account of &lr W. Lane, and a pen. of ewes from Mr W. M. Crocker, "Ashcombe." NUT BUTTER. .' Tho. increasing popularity of butter made from vegetable oil is a mattor ol serious intense, to colonials, who have built up ii liugo butter trade. Sumo ten years ago (says the "Standard"), attempts were maito to introduce vege table oils in tho manufacture of mar garine, only animal fats having been previously employed. Since then great advances havo been made, and ill the manufacture of margarine chemistry uas achieved one of its triumphs. To day nut butter is 0110 of the staple articles of loud for tho masses. At iirst cocoa nut oil only, was used in its manu facture, but many other substances are now employed, such as ground nut oil," and palm kernel oil. To malce all these oils a perfect basis, they are treated u'ith a light alkaline solution, which absorbs all free fatty acids in them, making tha oil neutral.
