When preserving largo fruit?, select only the l>cst cooking varieties of sound, fresh fruit, which is not over-ripe; paro carefully with a silver knife, and throw j immediately into cold water to prevent discoloration. Use equal quantities of fruit and sugar; weigh accurately and j cook slowly until tender and transpar-! ent. Delicious apple preserves ore mado by paring-, coring and quartering- firm, ] ripe apples. He has now proved that the colors of some cater? pillars are made up of mo lifted chloro phyl derived from the food plant. ?The Tyrians were the most expert dyers of ancient times. fabrics dyed with the famous Tyrlan purple did not assume their proper color until after two days' exposure to light and air.
