POULTRY Killing and Dressing Chickens The old ax or hatchet always has and probably always will be a common way of killing the Sunday dinners . Since the fowl is generally eaten right away , the condition of the carcass is not of great importance , but when chickens are killed a few days or longer before marketing , care should be taken that the appearance is as attractive as possible , and the keeping qualities are greatly improved by proper killing and dressing . A visit to the local market will generally show more or less dressed chickens , many of them purple and scarred in flesh , with little red spots about the body as though the blood had followed the feathers when plucked , which is practically what happened , every bruise and thumb mark showing , presenting an undesirable appearance . These conditions are due to improper killing and dressing . Sticking is as easy as chopping off the head , and as the bird is hanging when ^^ a READY FOR MARKET stuck , may be allowed to bleed...

ORCHARD AND GARDEN Care For the Orchard Orchards that are bearing heavily will need attention this month to prevent serious breakages from the weight of the nearly grown fruit . Of course , growers are enjoined to thin out their apples , pears and peaches to such an extent that the branches will not break beneath their burdens , but , as a matter of fact , not one grower for family use merely—out of one hundred—has time or strength for this task , and , indeed , in most seasons much fruit falls from insect work , which relieves the trees , though not exactly in the way that the owner would prefer . A half day spent in propping over-burdened branches is the best alternation for hand picking and often saves trees from serious injury and mutilation . Another duty that should be sedulously performed is to have all fallen fruit gathered up every day or two and deeply buried , if it cannot be fed to pigs .
