Pickle made in the following manner, it is believ ed, will accomplish this: If lbs. of salt coarse or alum salt is best. oz. salt petre. 1 pint of molasses, or 1 lb. of brown suar. 1 teaspoonful of saleratus. " ' Let these be "added to one gallon of wa ter, and the amount increased in the same .proprtions to make the quantity required, bring the liquor to a boil. Lot the pickle cocl, and pour it over the moat until en tirely covered. The meat should be pack ed in clean, tight casks, and should re main in the pickle six or seven weeks, When it will bo fit to smoke. Green hick ory wood is the best article for this pur pose.
