The leg of mutton is the most profita ble joint, containing most solid meat. The neck is an extravagant joint, half the weight consisting of bone and fat. The shoulder has also much waste in bone. The breast does well for kitchen dinner, nicely stuffed ; it is much cheap er than the other joints. Sirloins and ribs of meat are very extravagant joints, from the weight ot the bone. The roast ing side of the round part of the buttock and the part called the "topside," arc the most profitable family eating. The mouse buttock is used for stewing; shin is used for soup or stewing. The quan tity of butcher's meat consumed in a family is, on an average, three-quarters of a pound for each person; but when the family consists of a woman and children, half a pound a day is about the .quantity consumed one with another...

Clmfa Or Esrth Aloaad- This iHafft is coming into notice rery rapidly, and as if thrives well in the lat itude of Missouri and Kansas, we have thought it proper to give an account of its habits and uses particularly as the Agricultural Department at Washington has ordered a large amount fur seed. The botanic name is Cypenu Esctiknla. It is called by the French tuclile comctticle, or rush nut. The cliufa is a perennial plant, grow ing in the form of a rush, about three feet high. The fruit is in the form of tubers, about the size of an ordinary bean. Although belonging to the same genius as the well known "wildnut grass," it does not spread as that pest of the Southern fields. In taste the tubers resemble a chest nut or cocoanut, and may be eaten cither raw or conked, and after soaking over night in water may be eaten as sauce.
