COOKERY.' ,'.[ Pea, Soup. — Pen soup is. an ' excellent .soup; -arid is so nourishing that ' it may be: eaten instead 'of meat, as pens 'are both flesh-formers and heat-givers, hnd will give nearly as. much strength as meat, and at much less cost. Ingredi ents : Two pennyworth fresh beef bones, one- pint split pens; one turnip, one . carrot, one stick of celery (not a head), one tablcspoonful of powdered dry mint, pepper and salt to taste, live pints of cold - water, , and one onion. Break . up 2d. worth of beef bones into small pieces, -wash them in salt and water, put them into a saucepan with live pints, of : cold .water, add a tnblcspoonful of brown sugar, bring it to the boil, scum it, and let it gently simmer for four hours. Then . strain the stock into a basin, and when cold, take off the fat. Soak the peas all night in a basin of cold water ; this makes them swell and soften, so that they will, not require so much cooking. Pour the water away from the peas, put, them into a ...
