He formed a project to discover a north-west passage to Cathay (China), and endeavoured without success to interest others in his scheme, and thus form a com pany of merchant adventurers. HAY QUARTER SESSIONS. Monday, November 6, 1871. His Hon-jr Judg*e Francis took his seat on the Bench at ten o'clock. Mr. Forbes pro secuted for the Crown. Mr. Reed and Mr. T wynam local attornies. On the jurors' names being called, only twenty answered, a number quite insufficient for the purposes of justice, .the court was, therefore, brought to a standstill until jurors could be drawn from amongst the townspeople. The incapacity of the court-house was mani fested.. His Honor said it was wrong that they should be compelled to hold court in a dog hole like this, and in saying so he paid nocompliment to the dogs so poor and miserable is the building where tlie Court of Quarter Sessions is held at Hay. Substitute for Alum in Bread. — A correspondent writes as follows to a Melbourne contemporary : — ' I have visited Professor Liebig, and seen his admirable lecture room and laboratory — models for im itation in other countries. He told me that in England the bakers use a great quantity of alum in making bread. It is employed to make the bread white, moist, and soft. It acts by coagulating the gluten of the wheat, but it is deleterious in its effects. He has discovered that water saturated with lime produces the same whiteness in bread, the softness, and the same capacity to retain moisture, while the lime re moves all acidity from the dough and supplies an element needed in the structure of bones, which is deficient in wheat, and still more so in rye. I ate bread made of it in his house, and it was excellent. He uses 51b. of water saturated with lime to 191b. of flour. No other change is necessary in the process of baking. The lime coagulates the gluten as effectually as alum does. ...

LAYING THE FOUNDATION STONE OF THE HAY PRESBYTERIAN CHURCH, The interesting ceremony of laying the foundation stone of the above church was ob served yesterday afternoon. There was a numerous and respectable attendance on the occasion, most of the leading citizens and many of the surrounding gentry being pre-r sent. The services were begun by the singing of CXXVIII Psalm, after which a portion of the VIII chapter of the first Book of Kings was read, and then a solemn prayer was offered by the Rev, S. A. Hamilton for the divine blessing on the undertaking. Matthew Palmer, Esq., J.P., of Canoon Station, then handed the trowel to John Clark, Esq., J. P., of Kerarbury Station, who pro ceeded to lay the stone. HAY COURT HOUSE, During the sitting of the Court of Quarter Sessions on Monday, some of the gentlemen of the district, jurors in the first case, drew the attention of his Honor Judge Francis to the absence of accommodation in the Court-house. His Honor replied, that as a pre liminary to the introduction of Quarter Sessions in any town, proper arrangements for working the business of the court should be made. The accommodation for Quarter Sessions at Hay is ab solutely disgraceful, he had spoken of it in the proper quarter and would continue to represent the matter as a standing disgrace to the goyernment, but how long it would continue a standing disgrace was a questionable matter; He had thoughts of having an umbrella sus pended over his head to ward off the detatchynents of plaster drop ping from the roof, and if the building were not speedily seen to it would be a tumbledown disgrace. -i j Forsyth & Lobohnan's Report, November 7tn. We have placed Miparo north and Miparo ' couth, and Manfred east under offer, and ex pect to . conclude the sale next week. There is an increasing demand for both frontage and back jruns. Xn fat cattle we have no sales to. report, or ig£a£ sheep. , . :. We have sold 350 head qf store bullocks irom iiie-J-linders raver, now near Hay, at a satisfactory price for cash. For store sheep the demand continues good, land several transactions have taken place during the- past weekj a large flock of mixed ewes and wethers in the wool, from Queens land^ Jiaye changed hands. Our sales have been 3, W0 breeding ewes, on account of Colin W. Simson, =Esq., Mungadel, to Messrs. Faed & Sumner, at r the top price of the season. We have (sold a few rams for Messrs. }r & A. Broad, on favorable terms.
