APRICOT GfiAllLOTTE. £ lb. of apricot's slewed, kept whole, ^ pint cf apricot piine, 12 ladies' finger?, 1 gill of honey, 1 tea spoonful of runy ! Move:—Line a charlotte mould with sponge fingers dipped in clarified butter. Lay a couple of fingers on the bottom of the mould. Put in the | whole apricots (not the syrup) and fill in with puree, put some calces over the top, and bake in a brisk oven. Stew with sugar and return to the oven a minute to glaze, or pass a salamander over it. Sauce.—Dissolve the honey in the syrup from the stewed fruit, and add the mm. Pour over nnd serve hot. N.B.—Bread dipped in butter though not so rich, is very good in place of the sponge fingers.

APRICOTS or PISACHKS a t.a TOSGOLA. (5) $ Hi. apricots, stewrd J liqueurglass maniscliirin or noyeau, 1 oz. dissolved jelaiiiie l pt. rich custard (2 eggs, \ glass milk) flavoured 'with vanilla £ pint whipped cream. Mopf,.—Pour off the syrup from the fruit and lay the fruit at the bottom of a glass dish. To the warm syrup add £ oz. gelatine and the liqueur, pour by degrees on tt^e fruit, set this to get cold. To the custard add the other £ oz. gelatine, and when cold but not too stiff pour on the fruit in the dish an inch thick layer. This also should consolidate., aarnish the top with rocks of whipped cream in two colours. 'i'bis may be put into a plain mould and turned out showing the different colours and garnished with creatti at the base instead of on top.
