The Sculling Championship. Beach has since his victory over; Hnnliin been challenged by Peter Kemp, his trainer, who is the prettiest oai'Bman in tho colonies, to row over the championship course on the Parra lnutta River, for the championship of the world and £500 a side. At the wool sales to-day 10,600 bales were catalogued, making a total of 89,900 bales during the present series, Tho tone of the sales generally is de cidedly firmer, and superfine qualities of greusy ure about one penny per pound above the rates ruling at the close of the last sales. Medium and inferior qualities of greasy ure about u halfpenny higher. Scoured wools gen erally range from a halfpenny to a penny above the closing rates of the last series. . December 3, At to-day's colonial wool , auctions 9,000 bales were offered. The market is steady. The present series will close on tho 10th inst. During the past few days there has been an increased animation at the wool sales, a general rise of ^d. per lb. having taken place on Australian aud Capo wools. Balranald Municipal Council. The usual fortnightly meeting of the above Council took place on Monday night. Present — Aldermen Close (mayo r), Cram, Boyuton, Orinham, Barlow, anil Dr. Lawson. The minutes of the last meeting on the 21st ot .November, were read and confirmed. Accounts amounting to £70 14s 3d were passed fur payment, and tliu bank book tabled, shewing u credit balance of £215 15s 8d. The Works Committee made their report of a meeting held the same fore noon. They examined the gravel-pits worked by Messrs. Overy and Smith, and found the work progressing very satisfactorily. Mr. J. Rowing Match. A friendly rowing mutch took place here ou Saturday last between Messrs. M'Mahon 1, Meld nt m 2, and Lobuey 3. As there was only one light bunt available the match hud to be rowed against time, and the result was, (1st.) l4min. 13J.iec, (2nd) I6min l^seo, (3rd) ISiniu 40 sec. It must', however, '.be remarked thut No. 2, on his way home ran foul of a snag and had to get out of the boat to push it of, which accident naturally lost him a lot of time, and No. 3 sprained his wrist und was scarcely able to use his sculls nt all on the home journey. Whether tho result without these accidents would have been diff erent, is haid to say, the winner is un doubtedly the strongest puller, and with a little practice in steering and feather ing the water, will lie hard to beat in our neighbourhood. rUDDINGS AND SWEETS. . Pun1 Paste,— Ingredients : 1 lb. flour, C oz9. bnttcr, G ozs. lard, rather less than J pint o£ water. Method : I£ tho butter is very salt, it should jbo washed in cold wator, then well squcezod to extract all the moisture Seo that tlio flour is quite dry nnd free from lumps, then mix it into a smooth paste with tho wator, using n knifb for this purposo, nnd taking care not to make it too wet, or the paste will bo tough. Turn it on ton well-floured pastry poard and roll it out until it is about an inch thick, spread it with equal parts of butter and lard, sift over it a very little flour ; fold it up, roll out again, nnd spread moro butter and lar.d ns before. Do this three or four times, till nil tho butter aud lnrd nro used, taking enre to flour both paste and rolling r|n to prevent them from sticking. H15AT AND' POULTRY. Rolled Steak, No 1— Ingredients : Rump steak, forcemeat of bread-crumbs, pork, half nn onion, pepper, nnd salt ; browned flour and butter for the gravy. Method : Take a good steak, not too thick, beat it flat with tho'broad side of a hatchet, and cover with a forcemeat made of bread crumbs, a little minced pork, and half an onion. Moisten this slightly, aud season to tnsto with salt and pepper, liull the steak up, closely enclosing the stuffing, bind with twine into a compact bundle, nnd lay in a deep dish. Dash a teacupful of boiling water over it, cover with another dish, nnd bake about throe quarters of an hour iu its own steam. At the end o£ thin time remove tho cover, baste with a little butter, nnd dredge with flour to brown tho meat. When it is a good color, serve on a very hot dish. Fisur' FISH CliOQUF.TTES.— Ingredients : Eo mains o£ cold fishr- boiled, 'baked, or fried — one third ns much ransliod potatoes, ft little melted butter or white sauce, 1 beaten egg, chopped pnrsley, salt and pepper, seasoning of'walnut ketchup or anchovy sauce. Method : Pick the fish carefully from tho bones, and-chop it fine, beat the .potatoes to a cream with melted butter, add the pnrsley, pepper, salt, and sauce, and mix all well together. Make the mixture into balls or eggs, roll them in tho beaten egg, strew over with fine breadcrumbs, and fry quickly in boiling fat. Serve very hot .with sliced lemon,

' Method : Cut the meat into dice, peel and chop up all tho vegetables, add tho rice nnd seasoning, mix all well together, nn'd put into a strong earthenware jar, pour in the water, fit tho cover on closely, nnd set in tho oven in a pan of boiling water for G hours.
