TuinmHR is probably no portion. of the work in connection with the buttermaking iadus; try which is of such great imnpprtance as that relating to its pieservation. It is one thinii to make good butter-it is quite another thing to keep it. The ability to hake but ter which will keep good for a coinsiderable period is the most important of all the work in the butter dairy, for in the first place suchl butter is sure to be of high quality, and in the second it gives the maker an ad. vantage, which, in the year, will probably return him twenty.five per cent, more than would otherwise be the case. Three months ago butter could be pur chased in different parts of England at as low as'81d per pound. It is perfectly clear that if makers. of such butter as this thor oughly understood their work, they would be able to preserve it until the price rose, and, in many instances, obtain seventy five per cent. more than the price at which it as made .
