At a farmers' institute meeting re- v cently the question was asked : n " Which will make the more cheese, a si cow which gives 40 pounds of milk a t day, containing:8 per cent. fat, or one a that gives 20 pounds containing 6 per f cent. fat 1" Mr. George A. Smith, the k conductor of the institute, answered as e follows :- s "A pound of butter fait will make, c or should- make, 2.70 pounds of cheese a or a pound and two ounces of butter, s allowing 15 per cent. moistures in thel butter and 37 per cent. moisture in . the dheese. There are four solids in milk, viz., fat, casein, sugar, and ash. The two latter do ndt vary much in rich or thin milk, but the two former do. Mr. Charles 'O'Neill, Police Con stable at Broket Hill, has written a grateful letter tO 'the Bile Beans Manufacturing Co., telling of his speedy cure by' Bile Beans of that most distressing malady, Bilious Head aches, with which he had been suffer ing for many years.
