Settle, of Sau Jose, who hag hart some considerable experience as aa orokiu-dist, and who is tlie superin tendent of the Alden fruit drying es tablishment at Ban Jose, recommend* the following varieties—apples, pears, prunes and plums—for drying pur poses: Apples.—Skinner's Seedling Graj vanstein, Smith rider, Fall Pippin and Yellow Betltfower. All the above varieties dry white, and are of good flavor, particularly the two first and the last named. Pears.—The Flemish beauty is very superior indeed—the smoothest and easiest worked, and best pear fof drying. Swan's Orange and Gloufl Morceau are also good for drying. The 1 Bartlett is not manageable by ma-j chinery; when it is ripe enough to dry, the core is too soft to hold to the fork of the parer. The flavor is very superior, but it must be pared by hand.
