Flaked Pastry. [Newspaper Article] — Robertson Advocate — 18 January 1898

Flaked Pastry. This is used for steak and kidney pie, apple pie, and Napoleons. Ingredients. — Half a pound floor, half a teaspoonful baking powder, four ounces clarified fat or butter, one gill water. Method.— Sift the flour and bilking powder into a disb, add the water slowly Btirring with the fingers of ihfl right hand. Mix well till all 'the flour is taken np by the doDgh. Flours the paste board and roll out *he''paste square. Divide the fat into three parts ; spread one* part on the paste witb-Hb fingers, leaving about an inch margin all round without fat. Sprinkle a very little flour on the top ; fold into three folds, folding the top- end first, so as to prevent the fat from, com ing out. Turn the paste longways, with the open end towards you ;' roll out straight from you, but stop at 'the end. Now add another pat of fat, sprinkle flour on and do as done be fore.
