PICKLING BACON. , Numerous recipes are available for pickling bacon, but the principal of Hawkesbury College recommends the following, the quantities foeinf suffi cient for BOO lbs. of meat:—Clean rain water, 20 gallons; fine dailry salt, 50 lbs.; brown sugar, 5 lbs.; saltpetre, 2 lbs.; allspice, %lb. Dissolve the salt, sugar, and salt petre in the water. Immerse the all spice, tied'up in a calico bag. Boil for one hour, and slclm off the frothy matter rising to the surface whilst . boiling. Allow this solution to cool before filling the pickling vat, barrel. | or tub. The sides should be rubbed • ■ with salt for two days before being immersed in the pickle. It may be necesBary to weight the sides to keep them immersed. The time in pickle will be determined by the elae of the . sides, but it is usually three \yeekp.
