It is wrenching to imag- ine the grief of the families of the 12 miners who were found dead on January 4 after an explosion two days earlier in a West Virginia coal mine. More wrenching still to imagine, though, are the emotions of the men themselves, 13,000 feet below the surface of the earth, during their final hours of life. They had built a "rough barricade structure," according to the president of the mine company, and at some point Rabbi Avi Shafrati would have provided them one hour's worth of oxygen. They surely prayed, as did their families high above, for their rescue. They may also have hopefully recalled a mine collapse four years earlier in Pennsylvania, when nine min- ers were finally rescued after three days underground. We don't always say what we mean. Roasting is a good example. We know what roast turkey is, but do we know what the meaning of the word "roast" is? In essence, roasting is cooking, over flame or heat, without adding liquid to the food and without covering it during the cooking process. This method of cooking is also consid- ered "dry heat." The beauty of roasting is a crust — a caramelization of the "skin" of the food — that many con- sider the best eating (imagine a steak, dark and almost crisp on the outside, and pink inside). Thus, if you're adding large amounts of liquid (don't include basting fat or cooking juices in this ) to your food and/or covering up during the majority of the cooking, you are not roasting.
