forestry prosecutions. Considerable interest was evinced in cases arising out' of certain un branded logs being found on the mill premises of William Tuck, Coliiani. William Tuck was charged witn having the logs, valued at 30/, in his possession ; Charles Tuck, manager of the mills, was charged with having caused the logs to be removed from certain Crown land ; and a charge was laid against a contractor named Thomas Seymour, but the summons had uot been served, who ia alleged to have removed the said logs. Mr Wiburd, assistant forestry inspector, con ducted the prosecution. W. Tuck pleaded "guilty, and. C.' tuck uot guilty. Mr W. R. Johnson, counsel for defendants, stated thae the cases arose out of a mistake on the part of a contractor haviug'carted some logs to the mill, of 'whlch defend ants knew nothing. MOCK KIDNEYS. Sheep's kidneys always' febch a good price, but a very good BUbstttnte for these delicacies can be made from a very fresh liver—sheep's liver. After washing and drying the liver cut it into pieces resembling as much as possible a halved kidney. Dust the picces with pepper and salt. Put an ouncc of clarified dripping in an ena melled iron ntewpan, Ar soon an it melts, put in the liver with a des sertspoonful of chopped onion and a tcaspoonful of chopped parsley. Dust eome seasoned flour over, and fry for ten minutes, turning freauently. Allow the liver fco Bimmer for half an hour, and eerve with fried bread. Cut a slice from a stale tin-loaf ; remove the crust, divide the slice in four pieces, and fry them in hot fat until nicely browned. F'or a family dinner the addition of sippets may be dispensed with. Sheep's liver is inexpensive. Dressed an I have des cribed, and cooked very gently, it will be tender and very tasty. Serve with plenty of vegetables.
