Sweet breads should always bo blanched ; that is, after they have been soaked and cleansed ia lake-warm - water, throw them into boiling water five or ten minutes, according to their size ; lift them into fresh, cold water, and let them stand until cold. This makes them firm and white. Then cut in slices, and fry carefully in butter, until they arc a nice brown. Remove them from the pan, make a nice gravy of fiour, properly seasoned with pep per, salt and a little lemon juice, (not extract) and return the sweet breads to the pan, and let them stew in the gray. If you have it, just before serving, add half a tcacupful of sweet cream, but do not let that boil. Scud to the tabic in a hot tureen.
