Just a few remarks of the advantages and prospects in your Sunny South Colony , which may be of interest to someone that , intends leaving the Frigid North for a Southern Clime . I have been here since last December and in the meantime I have looked around a great deal , and find things to be as they were represented . So far , I like It well , the location being all that is desirable . Have heard no complaints from the colonists , one and ajl seem to be well satisfied and are settled down in their new homes ready for business . Herds , Flocks and Dairy SEPARATING CREAM WITH WATER TO the Editor : —In a recent number of - your paper I noticed an article headed , / Separating Cream . Being somewhat skeptical as to the results obtained I tested the separating power of water with a ten-quart glass jar . In two hours all tiie cream was on top . I then had a faucet put at the bottom oif a ten-gallon milk can , and have been separating my milk according to Mr . Ward s directions ever since , with these results : I get all the cream , without the labor of skimming , pan washing or the constant firing up of the dairy stove . I find that ice water is unnecessary . For the first three weeks the water used was below 55 degrees Fahrenheit . I have used ice water since the cold wave struck us , but do not find it any better . The cream separated in this way is peculiarly sweet and fine flavored well adapted for table use—so well , m fact that we are using most of ours on the table . Here in Vermont we have had mild weather with only , two short cold spells up to the second v week in February ; and with little snow > Since then we have had cold , storming weather , with plenty of snow , and roads badly drifted ; . • Until the last , cold spell it has been a good winter for stock , where ; there were favorable surroundings , such as every farmer should aim to have . There is usually plenty of fodder and a good amount of grain was raised . ; This , with the very cheap rates at which western feeds can be purchased , has enabled fanners haying cows in milk to do very well , indeed . THE MILK TRADE OF NEW YORK . We copy from the Milk Reporter some figures which show the amount of milk in its . various forms handled and used in New York City for the years 1894 and 1895 . During the year 1894 the total number of gallons of fluid milk received over the various routes was 74 , 792 , 730 . . In 1895 , 77 ,- 290 , 640 gallons , showing a considerable increase in the amount of natural milk used in that city . Of cream , in 1894 there were sent into the city 2 , 102 , 690 gallons , and in 1895 ; 2 , 221 , 570 gallons ; showing of this article also an increase of about iO per cent . Of plain condensed milk , not the sugared article , there were sent . to New York in 1894 , 673 , 020 gallons , and in 1895 , 785 , 190 gallons ; showing a very considerable increase in this as well .
