FRYING. [Newspaper Article] — Los Angeles Herald — 13 November 1873

FRYING. There are two very dft*erent way■ of frying; one Is to have enough boiling fat to immerse the objects fried, and the other is to have lust enough of it to merely cover the bottom of the fry - ing-pan, and prevent the objects therein from burning. Inexperienced housekeepers or cooks often make mistakes on that account. They hear or read that such an article of tood is excellent fried; they try it,not knowing in which way it ought to be fried, either with little or much fat, and just as often spoil the article as cook it well. To guard our readers from mistakes of this kind, we shall call frying with much fat (when the objects are immersed) to fry, which is the real name for it, aud we shall call frying with little fat (when there is only enough of it to merely cover the bottom of the pan) to saute, which is its French and right name, there being no corresponding word to it iv English. For instance, small fish are fried, but omelet is saute; potatoes are fried, but parsnips ar...

THE MAN ON THE CLIFF. [Newspaper Article] — Los Angeles Herald — 14 November 1873

THE MAN ON THE CLIFF. The circumstances of this story can, I have no doubt, be scientifically explained; but I do not pretend so to explain them. I can only relate the events as they occurred to me, leaving the reader to form his own judgment, scientific or otherwise, upon the narrative. in thesummer of 186—, an unusually warm and dry one it was, 1 remember I had occasion to visit the North ceast of Spain on professional business, I am l painter, anil 1 started oil* to ramble the best way 1 liked, to the sunny land —through Paris, the gay city of pleasure; through tht fertile plaint of Languedoc to the West, and to the Pyreueese, Which towered almost above my head, reflecting the last rays of the setting huh In tints of gorgeous splendor, as 1 sighted the little town of Hayonne, one summer's evening. On through Biarritz to quaint St. Jean de Luoe, nestling at the foot of the mountains, with the melodious sound of Sheep-bells far up on the heights floating ou the evening air, and the...

The Political Cround Swell. [Newspaper Article] — Los Angeles Herald — 14 November 1873

The Political Cround Swell. The uanicand demoralization which smote the Republican party in October, seems to hnve been intensified in the late election, and the effect in many parts of the country is overwhelming. The Independent movement has been successful, either wholly or in part, in nearly every State where elections have been held. Even in Michigan and Massachusetts the panic has reached the disciples of Grant. In the latter State, the majority of 72,000 one year ago, has been reduced to 12,---000 or 15,000. Cen Banks has beaten his Republican competitor for the State Senate, and all the large citiesBoston, Lowell, Worcestorand Springfield, have given Democratic majorities, showing the astonishing bewilderment and demoralization of the Republican party in the Old Bay State. In Michigan, the special election in the sth Congressional District, to fill the vacancy in Congress, caused by the death of Hon. W. D. Foster, is so close that only the official count can decide tiie cont...

Late Telegrams. [Newspaper Article] — Los Angeles Herald — 14 November 1873

Late Telegrams. i:\4M ISIVKI.V TO Tilt. lIK.K Vl.l>. NEW YORK. NEW York, Nov. 1:;. - Foreign financial news continue to improve, and the feeling is growing here that the crisis in London lias passed. Private dispatches to bankers here confirm ibis view and say that the improvement extends to all important mercantile centers, so that while the Bank of England's rates continue at nine, prime discounts arc doing in London at eight per cent. The New York Banks to-day have over $27,000,* 000 legal tenders, showing an Increasing strength and a disposition to liberal discount. Commercial paper advices from the interior are all brighter, showing a moderate revival of business and confidence In foreign exchange steady; produce exports continue heavy, freights to Europe high. Capt. Duncan, Tinted States Shipping Commissioner, is accused of mo- nopolizing the whole business of Skipping seamen, and of having 82 agents for that purpose whom he pays out of money received instead of pay...
