Ned Hanlan Dilates on Searle's Prowess (From the San Francitco Chronicle. J Ned Haitian, the ex-champion oarsman of the world, is full of admiration of Searle, the young Australian sculler, who is to row O'Connor for the championship of the world in England this fall. 'Searle is one of the most wonderful athletes Australia has produced, and that is saying a good deal,' remarked Hanlan to the editor yesterday. ' He far outclasses sucu men -as ucacn ana nemp, and no one will deny that both are great oarsmen. Scarle has the advantage of a most powerful constitution, and is a phenomenal stayer. He is also a spurter of the most extraordinary kind. He starts away on a race at forty-five strokes a minute and will keep it up a couple of minutes, nnd then slow down to thirty six and still keep flying. Milk and Cream. An interesting bulletin has lately been issued from the Agricultural Experiment Station of the University of Wisconsin on the constitution of milk and the conditions which'aflect the separation of cream. The results of nnalysis And investigation ate sum marized as follows : — First — That milk when fresjj is a perfect emulsion, the fat globules being free and without an envelope. Second — That the chief differences iu the composition of normal milks are due to vari ations in the amount of fat, tlie remainder of the milk, known as the milk s:rum, being quite uniform in composition iu all milks. The variation id the amount of scrum solids, in milk fvorn the same cow, ir rarely more than one-half par cent, in milk from cows of different breeds not more than 2J per cent.
