TOASTED CRACKERS.-Split IIardman's crackers and toast them until brown over a hot fire, or butter them lightly, and brown them in a hot oven. HASTY PUDDING.-Beat hall a cup of butter and the same of sugar to a cream, add the yolks of three eggs, two cups of cooked rice, and the beaten whites of the eggs ; serve with sauce. FOR the inside of an apple dumpling, peel a good sized apple, cut in halves, take out the core, and fill the opening with sugar ; then put the halves together, wrap the dough closely around them. This improves the flavour greatly. EXCELLENT COFFEE-CAKE.-Two cups of Hour, one of sugar, one of raisins stoned and chopped, half a cup of butter, half a cup of molasses and of cold coffee, two eggs, one teaspoonful each of mace, cloves, and ol'cinna mon, one of soda dissolved in the coffee. EEOIPES. ORANGE PUDDING.-Take the yolks of three eggs, a tablespoonful of flour, one breakfastcupful of powdered white sugar, one pint of milk ; make into a custard by allowing it to come to the boil to thicken. Peel and Blice five oranges and put the slices into a pudding dish, with sugar sprinkled over each layer. While the custard is quite hot, pour it over the oranges ; make a whip of the whites of three eggs and two tablespoonfuls of sugar, place on the top, and brown very delicately in the oven. BAKED APPLE DUMPLINGS.-Take one-half pint of raised bread-dough, roll into it one large spoonful of butter ; roll out, then fold it and set it aside to lighten. When well raised, divide into six parts ; roll them out thin. Have ready six good-sized tart apples-pared and cored, the holes filled in with sugar and butter.
