CURRAJONG CREEK. SOME four to eight miles south from Gin Gin is the Currajong Creek district, an area of volcanic ridges with alternating alluvial flats. It is settled chiefly by men farming small areas, the chief crops being sugar-cane and! maize. The cane is sent to the Gin Gin Central sugar mill, situated on the north bank of the Burnett River, about 8 miles from Gin Gin township. This mill was erected in 1895-6, under the Sugar Works Guarantee Act, the com pany receiving an advance of ,£50,000, audi is now under the manage ment of "Mr. Heyden, with Mr. Deeley as secretary. The first crush ing took place in 1896. Since the mill was erected a further ^10,000 has been expended in necessary additions, and it is expected that a furti er .£5,000 will need to be laid out to cope with the increasing area under cane. The interest on the loan has been paid, but not the redemption, owing to the earnings being utilised to effect the necessary improvements and additions. The mill is capable ...

USEFUL RECIPES. Christmas Pudding.-i cup each of flour, sugar, chopped suet, currants, raisins and milk, 2 cups of breadcrumbs, 5 eggs, half-cup of candied peel, 1 grated nutmeg, half packet mixed spice, pinch of salt. Mix well the dry ingredients, beat the eggs and milk to a froth, and pour over them; mix the whole well to gether ; steam in a basin eight hours. Christmas Cake.-1 ib butter, 12 eggs, 1 quart flour, 1 ft> sugar, J 5) mixed spice, 3 lb currants, 1 flj raisins, \ ft) almonds, \ lb candied peel. Beat the butter to a cream, stir in yolks of 12 eggs well beaten with the sugar, add spice and almonds chopped fine, stir in flour, add currants, raisins and peel; bake in but tered paper in tin for 2 hours or more. Lamington Cakes,-\ cup of butter, 1 cup sugar, 1 cup flour, 3 eggs, 1 teaspoon baking powder, 4 tablespoons milk.
