Home, Farm & Garden. HOW THE FRENCH COOK PEAS. Peas are cooked without water in French kitchens. Pnt the peas iu B&ocepan, with a good piece of butter size according to quantity of pea. Place two or three lettnce leaves over the top. Pnt on the cover aid set on the back of the range. They runst cook rerr slowly till tender. Take out the lettnce leaves and serve. If peas are cooked with water they must boiL Let there be jost sufficient water to cook them.
