RECIPES ---:--- THE VALUE OF CIHARCOAL. This article would hardly be couiplet ed unless it dealt with the problem of keeping food in hot weather. The an swer is the use of lump charcoal, of the right kind, Jlb will contain a good man? thick sticks. several inches long, the remaindei' being in rough lnmps; the size of a large walnut. Before using the charcoal, each piece should be carefully washed in warm water,. u rqmnove the dust; Then the . only ut tention required is to sorutb it ' itl hot-soda water, whnoever the charcoal is liable to become greasy or sticky. To preserve a joint, put three or four sticks on a dish. On these place the meat, laying on it about the same amount us underneath. In very lot weather more may be usod, and whlo there is thunder about, an added cre caution is to place a sort of paling of ,longl' sticks, set on end, all round m hl joint.
