Crisco is different also in this respect: It remains sweet and pure indefi nitely. For the parts of the oil which turn rancid arc eliminated by the Crisco Process. Do not confuse Crisco, therefore, with "lard compound". In the com pound there is present a coodly quantity of hard animal fat, necessary to stiffen the vegetable oils. The Crisco Process does away with the need for usine the animal fat, which at best is difficult to digest and makes ioods less appetizing.
