WATERCRESS BUTTER. Watercress, if gathered from a pure stream, is one of the moit delicious, and certainly one of the most whole some, greens we have ; it is like wise one of the cheapest. Pick from the steins the leaves of the cress,' mince them as fine as you can, then' dry them in a clean cloth. After wards knead them wilb as much fresh butter as they v.'dll- ta'tc, add ing a very little salt and white pep per. With a butterman's wooden pat stamp out the watercress butter, and send to the table garnished with watercress sprigs. Some finely, grated cheese may be added to half the mixture, so that each taste jnay be accommodated. To mince the leaves ta'te two sharp knives, on3 in each hand, cross the blaies and cut from right to left. Parsley, mint, and other fine herbs can bo minced more quickly by this method than if chopped.

A NICE CHEESE PREPARATION. ' Break two o"n:cs of butter in pieccs, put it in a saucepan and pour over it a pint of boiling water. Have ready a cupful each of grated cheese and flour, seaio.ied with salt, cayenne, and a little mustard. Add these gradually to the hot water and butter, stir until smooth, and boil the mixture for five minutes. Set it aside to cool, and when nearly cold add to it four beaten cgiis. Beat all these well together, the eggs be ing put in one at a time. Con tinue beating for a quarter of an hour at least, drop spoonfuls of the mixtures on a grea=cd baking tin, and cook in a slow oven for a quar ter of an hour.

TO REMOVE INK MARKS FROM MAHOGANY. - Put a few drops of spirits of nitre into a teuspoonful of water ; touch the spot with a feather dipped in tho fluid-, and immediately the ink disappearsrub the wood with a cloth wetted with cold water ; if this is not dene there will remain an almost ineradicable white mark. To take win-2 sta'ns out of linen hold the discoloured part in triilk boiling over the fire, and the stain will soon disappear.

TO MAKE SOFT SOAP. Take one pound of stono potash to one pound of uny kind of fat. Crush I lie potash well, then placc in a large pun with two gnllons of water; let boil till dissolved, then add the fat, and when it is all melted pour inlo a tight barrel, nil up with l.oil'ng water, and stir every day for a week for ten minutes, nnd it will gradually become a jelly. It keeps well, ami is so easy to make. The quantities can bo easily divided.
