Take three quarters of a pound of Buet, chopped, fine and fre -trom shreds ; to this add the same weight of seeded rai sins and well washed currants each, quar ter of a pound of citron thinly sliced, three-quaners of a pound of sugar, the same of fine bread crumbs, two chopped apples, and the grated peel of one lemon. Mix all these with half a teaspoonful of ground cloves, the same of salt, six eggs and half a gill of brandy. Have, if pos sible, a covered puddiDg-mold, and hav ing filled it, two-thirds ,ull, steam the pudding for full three hours, then turn out upon a hot platter; sprinkle over with sugar and over this pour a half pint of warm brandy or rum, and light it just as it is pet upon the table to serve, SAUCE VOR THE.
